I stunk at keeping to my menu last week.
It was a difficult week for me, and so I never wanted to cook.
So many dinners will be a repeat.
Breakfast & Elevensie's:
Cheerios with banana
Pancakes
Eggs with green bells & cheese
Oatmeal
Lunch: {usually served with some sort of fruit}
Grilled pizza sammies {grilled cheese with pepperoni}
Peanut Butter and honey sammies {my kids hate jam...except my watermelon jam}
Kraft Mac and Cheese
Leftovers

Post School Snacks:
Apples and cheese

Mom's 1 minute gluten free/carb free muffin:
- It uses ¼ cup flaxseed, ½ tsp. baking powder, 1 T. melted butter and one egg. Mix the wet, then the dry to the wet, add cinnamon & 1 T. splenda or 1T. pumpkin pie spice if desired. Then pop in the microwave for One Minute, and VOILA you have a muffin.
Dinner:
Crispy Shrimp Pasta and Butternut squash soup
Chicken Alfredo with frozen veggies
Apple Pork Bites with roasted squash
Eggplant and veggie Parmesan bake

I'm also going to try out this amazing sounding veggie side from Julie last week,
Try "Popcorn Cauliflower" - Cut up two cauliflower heads and throw them in a big ziplock bag. Spray with pam (or drizzle oil if you prefer). Add 1 teaspoon salt, 2 teaspoons sugar, 1/4 teaspoon onion powder, 1/4 teaspoon garlic powder, 1/2 teaspoon paprika, 1/2 teaspoon turmeric. (If you don't like any of those spices, you can try whole wheat bread crumbs instead). Shake bag until cauliflower is evenly coated. Spread evenly on a covered baking tray (with parchment paper or non-stick foil). Bake 30-35 minutes at 450.
